on Uzume, Amano, and Dates

Probably not, for either of them. (Not official dates, anyway, but I'll get to that)

and since i got kind of longwinded with my explanation:

In Uzume's case, it ultimately boils down to the fact that she doesn't want to give the clan elders more reason to push her to quit field work, settle down, marry, and start popping out babies For The Good Of The Clan. Not only is the thought of being pregnant unpalatable to her, babies and small children are fragile and need constant care and the thought of being even jointly responsible for one or more is terrifying.

Amano is… a way different story. With the clear divide the Hyuuga have between main and branch houses – not to mention the caged bird seal – imo they're a lot more concerned with lineage and genealogy than other clans. That makes Amano, a bastard son with a non-Hyuuga father… not exactly a favored person in the Hyuuga clan. Which means a) he's Not Great at building relationships on his own and b) he's not high on the list for the clan to arrange a marriage for him.

and now, for the No Official Dates explanation:

Headcanon time! Most ninja couples tend to spar a lot in addition to doing date-like things. Uzume and Amano's primary sparring partners are each other. They also do things like eat together because they've been best friends since the academy as well as being genin teammates, and people just Assume.

Another headcanon is that shinobi barfights have unspoken but highly enforced rules – each side gets one punch at each other, and then they have to go find a training field to fight in* (which more often than not is followed by having sex). Uzume and Amano's primary bar fight partners are, again, each other. So even if they've never actually followed through with the sleeping together part, people Assume.

(One time while Amano was out of the village on a mission Uzume tried having a bar fight with someone else, but he was boring to spar with and tried to talk her into having sex afterwards like it was a given. After that Uzume decided to not even bother trying to find other people to fight with.)

(* If people are too drunk to follow the Bar Fight Rules and start brawling in the bar, then they get dog-piled by every other ninja in the bar and then arrested)

I like this headcanon about bar fights. Kinda puts a different perspective on some old Naruto fics I've read if they too would have ended their fights like that, lol!

Edit: Now I remember that filler ep where Gai woke up with Lee in his bed after a bar fight. Omg. XD
